Ecuadorian food culture changes drastically as you travel from the Coast to the Andes to the <\/span><a href=\"https:\/\/www.wanderbusecuador.com\/how-to-get-to-amazon-rainforest-from-quito\/\"><span style=\"font-weight: 400\">Amazon<\/span><\/a><span style=\"font-weight: 400\"> because the culture itself also varies.<\/span><\/p>\n<p><span style=\"font-weight: 400\">The Andes is responsible for the country\u2019s agricultural production. Fresh produce and grains abound and are apparent in the region\u2019s traditional cuisine. Given that this is also a colder climate, the food tends to be wholesome, involving many warm stews and lots of potatoes.<\/span><\/p>\n<p><span style=\"font-weight: 400\">On the Coast, the food is characterized by the use of fresh seafood and plantains, both of which are abundant in the region. All along this region you can try dishes like <\/span><i><span style=\"font-weight: 400\">sopa de cangrejo (crab soup)<\/span><\/i><span style=\"font-weight: 400\">, <\/span><i><span style=\"font-weight: 400\">encebollado (fish soup)<\/span><\/i><span style=\"font-weight: 400\">, <\/span><i><span style=\"font-weight: 400\">ceviche (lime-cooked seafood dish), <\/span><\/i><span style=\"font-weight: 400\">and <\/span><i><span style=\"font-weight: 400\">encocados (coconut-based seafood dish). <\/span><\/i><span style=\"font-weight: 400\">These are all dishes that require fresh crab, fish, shrimp and squid &#8211; directly from the morning fish market. These are usually eaten with a side of white rice and smashed fried plantains, called <\/span><i><span style=\"font-weight: 400\">patacones <\/span><\/i><span style=\"font-weight: 400\">in Spanish.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400\">In the Amazon, agricultural production is much harder due to the climate and pests. Though nowadays everything can get sent over from the Andes, food culture in this area is still characterized by the use of the region\u2019s natural resources. Freshwater river fish, and now farmed fish like tilapia, are used in <\/span><i><span style=\"font-weight: 400\">maitos,<\/span><\/i><span style=\"font-weight: 400\"> while<\/span> <span style=\"font-weight: 400\">starch comes in the form of yucca, papa china and plantains &#8211; all of which are easily cultivated here and resistant against pests.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400\">Due to the amount of fresh produce and grains,<\/span><b> Ecuador is a great country for vegetarians<\/b><span style=\"font-weight: 400\">. However, food culture across regions usually still revolves around meat of some kind. If you\u2019re vegetarian, keep in mind that most restaurants are willing to make adjustments to a dish\u2019s ingredients, but the price will either remain the same or increase. In more tourist-friendly places, like <\/span><a href=\"https:\/\/www.wanderbusecuador.com\/banos-day-trips-for-everyone\/\"><span style=\"font-weight: 400\">Ba\u00f1os<\/span><\/a><span style=\"font-weight: 400\">, you\u2019ll find more variety for vegetarians.\u00a0<\/span><\/p>\n<h2><span style=\"font-weight: 400\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-19955 size-full\" title=\"What do Ecuadorians eat for breakfast, lunch and dinner?\" src=\"https:\/\/www.wanderbusecuador.com\/wp-content\/uploads\/2019\/10\/encebollado.jpg\" alt=\"Ecuador food culture\" width=\"1200\" height=\"700\" \/><\/span><\/h2>\n<h2><span style=\"font-weight: 400\">What do Ecuadorians eat for breakfast, lunch, and dinner?<\/span><\/h2>\n<p><span style=\"font-weight: 400\">Depending on where you are, you\u2019ll have different breakfast options to choose from. That said, almost across the board, you\u2019ll find a conventional breakfast almost everywhere!<\/span><\/p>\n<p><span style=\"font-weight: 400\">In the Andes, the typical breakfast usually includes a glass of fresh fruit juice, a small bowl of fruit, warm bread rolls, a couple of fried eggs and coffee (unfortunately this may be instant coffee instead of drip, or <\/span><i><span style=\"font-weight: 400\">pasado<\/span><\/i><span style=\"font-weight: 400\">).\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400\">For breakfast on the Coast, you\u2019ll more likely eat a <\/span><i><span style=\"font-weight: 400\">bol\u00f3n<\/span><\/i><span style=\"font-weight: 400\"> with fried eggs, fresh juice and coffee. A <\/span><i><span style=\"font-weight: 400\">bol\u00f3n<\/span><\/i><span style=\"font-weight: 400\"> is made from boiled plantain that is usually mixed with cheese, and sometimes pork, formed into a ball and fried in a pan. It essentially replaces bread and is very filling.\u00a0<\/span><br \/>\n<i><\/i><\/p>\n<p><i><span style=\"font-weight: 400\">Encebollado<\/span><\/i><span style=\"font-weight: 400\"> is also a common breakfast on the Coast, but often too savory for many foreigners. It\u2019s a fish-based stew mixed with yucca, tomatoes, onions, peppers, and lemons. It\u2019s usually eaten with plantain chips or popcorn and is quite revitalizing, especially after a night of partying!<\/span><\/p>\n<p><span style=\"font-weight: 400\">Traditionally, in the Amazon, indigenous communities consume a large cups of <\/span><i><span style=\"font-weight: 400\">chicha<\/span><\/i><span style=\"font-weight: 400\">. <\/span><i><span style=\"font-weight: 400\">Chicha<\/span><\/i><span style=\"font-weight: 400\"> is made from cooked yucca and undergoes fermentation, making it mildly alcoholic (you have to drink several cups to feel any buzz). It\u2019s usually prepared by women and served in the morning, before everyone heads out to harvest food and\/or hunt. It provides a lot of energy and keeps people going into the late afternoon, when they return from their duties to eat dinner.<\/span><\/p>\n<p><span style=\"font-weight: 400\">Obviously, if you\u2019re traveling through the Amazon region, you\u2019ll find breakfast options you\u2019re more familiar with. If you get the chance to visit an indigenous community though, you\u2019ll likely be offered <\/span><i><span style=\"font-weight: 400\">chicha<\/span><\/i><span style=\"font-weight: 400\">. This is an important symbolic gesture on behalf of the community &#8211; drink some of the <\/span><i><span style=\"font-weight: 400\">chicha<\/span><\/i><span style=\"font-weight: 400\"> so that you don\u2019t offend your hosts!<\/span><br \/>\n<b><\/b><\/p>\n<p><b>Lunch and dinner <\/b><span style=\"font-weight: 400\">are usually quite similar across Ecuador and revolve around a source of protein, be it meat, pork, or fish. These are considered typical Ecuadorian meals and, unless you have strict dietary restrictions, try them out!<\/span><\/p>\n<ul>\n<li><b>Llapingachos &#8211;<\/b><span style=\"font-weight: 400\"> Llapingachos are eaten nationwide and this dish is easily one of Ecuador\u2019s most popular. Travelers like it because it\u2019s filling, cheap and tasty. It consists of a few fried potato patties filled with cheese and served with a fried egg, avocado and meat. Llapingachos are commonly served at lunch restaurants and marketplaces and cost only a few dollars. Score!<\/span><\/li>\n<li><b>Hornado &#8211;<\/b> This is a pork-based dish and is very common in the <strong><a href=\"https:\/\/www.wanderbusecuador.com\/visit-quilotoa-and-cotopaxi-in-one-day\/\">Andes<\/a><\/strong>. The pork is seasoned with garlic, cumin, and beer and, once it\u2019s ready, it\u2019s served with fried potato patties, <i>mote<\/i> (corn), fried banana and a simple salad. Expect to find <i>hornado<\/i> at every marketplace, fair, and on the street.<\/li>\n<li><b>Ceviche<\/b> &#8211; Ecuadorian ceviche is very different from that of its neighbor, Peru. While Peruvians tend to cook their fish ceviche in lime, Ecuadorians usually prepare\/cook the shrimp or fish before mixing it with the rest of the ingredients, including lime and onions. Ecuadorian ceviche is served in a bowl and eaten like soup and the best <i>ceviche<\/i> can be found in the Manab\u00ed province, so if you\u2019re planning to travel to Ayampe or <strong><a href=\"https:\/\/www.wanderbusecuador.com\/quito-to-puerto-lopez-how-to-get-there-and-things-to-do-in-puerto-lopez\/\">Puerto L\u00f3pez<\/a><\/strong>, you know what to order!<\/li>\n<li><b>Encocado &#8211;<\/b> This dish originated in Ecuador\u2019s Esmeraldas province. It is a coconut-based dish served with seafood, including fish, prawns, lobster, or shrimp. It comes with a portion of rice and patacones (smashed fried plantain) and, while you\u2019ll see it on the menu along the entire coast, the <i>best<\/i> variety of the dish can be found in Esmeraldas.
