That is definitely the secret behind <\/span><a href=\"https:\/\/www.wanderbusecuador.com\/ecuador-food-culture\/\"><span style=\"font-weight: 400\">Ecuadorian cuisine<\/span><\/a><span style=\"font-weight: 400\">.\u00a0<\/span><br \/><span style=\"font-weight: 400\">The blessedly rich soil of Ecuador can grow pretty much everything you can imagine, from the sweetest and most delicious fruits <\/span><i><span style=\"font-weight: 400\">&#8211; welcome to the banana capital of the world! &#8211;<\/span><\/i><span style=\"font-weight: 400\"> to an amazing variety of vegetables (some of which you may never have seen before). Besides this, the Pacific Ocean provides an endless selection of seafood all year round.<\/span><\/p>\n<p><span style=\"font-weight: 400\">For a better insight into what to expect, you need to understand the basic ingredients of each region\u2019s cuisine. Food on the coast of Ecuador (Gal\u00e1pagos included) is mainly based on fish, plantain, peanuts, and coconuts. In the highlands, the staples are potatoes, beans and many different kinds of Andean corn. The regional meat specialty is guinea pig. In the jungle, most meals contain cassava, plantain, freshwater fish, and some other interesting animal species such as grubs.<\/span><\/p>\n<p><span style=\"font-weight: 400\">These are only the basic ingredients; a mix of condiments and herbs are also an important part of Ecuadorian cuisine. Just one thing to keep in mind: let people know in advance if you\u2019re not a big fan of coriander\/cilantro because Ecuadorians tend to top every main dish with this herb <\/span><i><span style=\"font-weight: 400\">&#8211; sometimes tons of it!<\/span><\/i><\/p>\n<h2><b><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-20305 size-full\" title=\"Traditional food you can\u2019t miss in Ecuador\" src=\"https:\/\/www.wanderbusecuador.com\/wp-content\/uploads\/2019\/10\/788a8889.jpeg\" alt=\"Traditional food you can\u2019t miss in Ecuador\" width=\"1600\" height=\"1067\" \/><\/b><\/h2>\n<h2><b>Traditional food you can\u2019t miss<\/b><\/h2>\n<p><span style=\"font-weight: 400\">Since each of Ecuador\u2019s \u201cworlds\u201d has its unique cuisine, here are my recommendations on food, listed by region.<\/span><br \/><b><\/b><\/p>\n<p><b>Coast and Gal\u00e1pagos:<\/b><\/p>\n<p><b>Patacones:<\/b><span style=\"font-weight: 400\"> Fried smashed pieces of plantain. Usually served with fresh cheese.<\/span><br \/><b>Ceviche:<\/b><span style=\"font-weight: 400\"> A combination of any kind of seafood marinated in lime juice and mixed with chopped tomatoes, red onions, cucumber, green pepper. Served with patacones and rice.<\/span><br \/><b>Encebollado:<\/b><span style=\"font-weight: 400\"> Ecuadorians claim this soup &#8211; made of tuna fish, cassava, spices, and pickled red onions &#8211; is the best cure for a hangover! In fact, this is the #1 dish in Ecuador, usually served with fried plantains.<\/span><br \/><b>Cangrejada:<\/b><span style=\"font-weight: 400\"> Cangrejo, or crab, is a specialty of Guayaquil, where the locals cook them with beer, herbs, and spices. Of course, the best accompaniment to this meal is more beer!<\/span><br \/><b>Biche:<\/b><span style=\"font-weight: 400\"> This thick soup contains seafood, plantain, cassava, and salty peanut butter.<\/span><br \/><b>Tonga:<\/b><span style=\"font-weight: 400\"> Nothing is more traditional than this dish, consisting of rice topped with chicken stew and peanut sauce, wrapped in plantain leaves, and cooked in a clay oven underground.<\/span><br \/><b>Bollo:<\/b><span style=\"font-weight: 400\"> A dough made of plantain and peanut butter, filled with pork or fish, wrapped in banana leaves and cooked in an oven.<\/span><br \/><b>Corviches:<\/b><span style=\"font-weight: 400\"> A kind of crunchy fried bread made of plantain, peanut butter, and condiments, filled with fish or shrimp. A cheese version can be made for vegetarians.<\/span><br \/><b>Bol\u00f3n de verde:<\/b><span style=\"font-weight: 400\"> A ball made of fried plantain, butter, and cheese. Most Ecuadorians prefer the version that includes <\/span><i><span style=\"font-weight: 400\">\u201cchicharr\u00f3n\u201d<\/span><\/i><span style=\"font-weight: 400\"> (small pieces of pork).<\/span><br \/><b>Tigrillo:<\/b><span style=\"font-weight: 400\"> A typical Ecuadorian breakfast consisting of mashed plantain, onions, bacon, and cheese, cooked in milk, and topped with two fried eggs.<\/span><br \/><b>Seco:<\/b><span style=\"font-weight: 400\"> This traditional meat stew combines chicken, lamb, or beef with a sauce made of tomatoes, peppers, onions, herbs, and condiments, slowly cooked with beer. It\u2019s usually topped with lots of coriander and served with rice and fried sweet plantains.<\/span><br \/><b>Menestra:<\/b><span style=\"font-weight: 400\"> Beans or lentils, cooked with herbs and sometimes chunks of cheese. Menestras are normally a side dish to accompany grilled meats and rice.<\/span><br \/><b>Encocado:<\/b><span style=\"font-weight: 400\"> In this traditional Afro-Ecuadorian stew, seafood is cooked with coconut milk, garlic, herbs, and spices.<\/span><br \/><b>Cazuela:<\/b><span style=\"font-weight: 400\"> This thick stew contains seafood cooked with ground plantain and peanut butter. Of course, it\u2019s topped with coriander!<\/span><br \/><b>Sopa de bolas de verde:<\/b><span style=\"font-weight: 400\"> This soup is made with cassava, corn, plantain dumplings filled with meat or fish, all cooked with a peanut sauce.<\/span><br \/><b><\/b><\/p>\n<p><b>Sierra:<\/b><\/p>\n<p><b>Fritada:<\/b><span style=\"font-weight: 400\"> Chunks of pork slowly cooked in its own fat, served with mote (a type of corn), sweet plantain, salad, and avocado.<\/span><br \/><b>Hornado:<\/b><span style=\"font-weight: 400\"> A whole roasted pig (head included), served with salad, potatoes, and mote.<\/span><br \/><b>Locro de papas:<\/b><span style=\"font-weight: 400\"> This hearty traditional soup contains potatoes, cheese and corn. It\u2019s served with slices of avocado.<\/span><br \/><b>Humitas:<\/b><span style=\"font-weight: 400\"> A corn dough filled with cheese, wrapped in corn leaves, and steamed.<\/span><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-20307 size-full\" title=\"Traditional food you can\u2019t miss in Ecuador\" src=\"https:\/\/www.wanderbusecuador.com\/wp-content\/uploads\/2019\/10\/locro-de-papa-1.jpg\" alt=\"Traditional food you can\u2019t miss in Ecuador\" width=\"1200\" height=\"700\" \/><\/p>\n<p><b style=\"font-size: inherit\">Llapingachos:<\/b><span style=\"font-weight: 400\"> Flat balls of mashed potatoes filled with cheese, served with sausages, salad, mote, avocado, and a peanut sauce.\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 <\/span><b style=\"font-size: inherit\">Mote pillo:<\/b><span style=\"font-weight: 400\"> Hominy corn cooked with eggs, scallions, and onions.\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 <\/span><b>Fanesca:<\/b><span style=\"font-weight: 400\"> The traditional Easter meal in Ecuador, this soup contains 12 different kinds of grains, <\/span><span style=\"font-weight: 400\">pumpkin, and dried fish. Once cooked, it\u2019s topped with slices of boiled egg.<\/span><br \/><b>Empanadas de viento:<\/b><span style=\"font-weight: 400\"> Traditional empanadas filled with fresh cheese and deep-fried.<\/span><br \/><b>Ceviche de chochos:<\/b><span style=\"font-weight: 400\"> A type of Andean grain substitutes for seafood in this ceviche.<\/span><br \/><b>Morocho:<\/b><span style=\"font-weight: 400\"> A hot beverage made of corn, milk, cinnamon, sweet pepper and raisins.<\/span><br \/><b>Cuy asado:<\/b><span style=\"font-weight: 400\"> Finally, the country\u2019s most famous specialty! Roasted guinea pig accompanied by\u00a0 \u00a0 \u00a0 \u00a0 salad, mote, and potatoes.<\/span><\/p>\n<p><b>Amazon:<\/b><\/p>\n<p><b>Chicha:<\/b><span style=\"font-weight: 400\"> This the traditional Amazonian beverage! It consists of cooked cassava that is chewed and spat out, so that bacteria in the saliva causes it to ferment. The longer it is left to ferment, the stronger it is!\u00a0<\/span><br \/><b>Maito:<\/b><span style=\"font-weight: 400\"> Maito means \u201cwrapped.\u201d So this is basically fish or chicken wrapped and cooked in plantain leaves, usually served with rice, salad, and patacones.<\/span><br \/><b>Chontacuro:<\/b><span style=\"font-weight: 400\"> A kind of worm that grows inside a palm tree. It\u2019s usually grilled before eating (bus sometimes not), and contains a lot of protein.<\/span><br \/><b>T\u00e9 de guayusa:<\/b><span style=\"font-weight: 400\"> Guayusa is a plant, whose leaves are boiled to make tea. This beverage provides energy throughout the day.<\/span><\/p>\n<h2><b><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-20309 size-full\" title=\"Why would you love Ecuadorian food?\" src=\"https:\/\/www.wanderbusecuador.com\/wp-content\/uploads\/2019\/10\/hornado-1.jpg\" alt=\"Why would you love Ecuadorian food?\" width=\"1200\" height=\"700\" \/><\/b><\/h2>\n<h2><b>Restaurants and venues recommended by destination<\/b><\/h2>\n<p><span style=\"font-weight: 400\">As well as my recommendations on food, I can also point you in the direction of some excellent restaurants to enjoy national cuisine.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400\">In general, my advice is to avoid the food chains <\/span><i><span style=\"font-weight: 400\">&#8211; except <\/span><\/i><a href=\"https:\/\/www.elcafedetere.com\/\"><i><span style=\"font-weight: 400\">El Cafe de Tere<\/span><\/i><\/a><i><span style=\"font-weight: 400\"> in Guayaquil &#8211;<\/span><\/i><span style=\"font-weight: 400\"> and go to the smaller, family-owned places full of locals!
